This is HP sauce, Ottolenghi-style: sweet, tangy, and piquant. Great on a bacon sandwich, for adding depth to stews, or as a base for a salad dressing. Dates bring sweetness, while tamarind adds tang.
Store in a cool, dry place. Once opened, keep refrigerated and consume within 4 weeks.
